A striking and unusual antique French fer à caraméliser, sourced from a traditional brocante market and labelled in French. This is a rare culinary curiosity, historically used to caramelise sugar on custards such as crème brûlée and crema catalana long before kitchen blowtorches became commonplace.
The heavy cast-iron disc is heated until red hot and held just above the sugared surface, allowing radiant heat to melt and caramelise the sugar evenly without contact. Finished with a taxidermy deer hoof handle, this would make an ideal gift for any taxidermy collector.
